Oriental Baked Tuna Stuffed Potato

Oriental Baked Tuna Stuffed PotatoIngredients

3 big potatoes washed and perforated
1 can (7oz) tuna (flaked)
125 g streaky bacon (chopped)
142 ml soured cream
2 tbsp butter
Salt
Freshly ground pepper

Procedure

1. Bake the potatoes for 1 ½ -2 hours or until tender in a180 °C.
2. Slice the tops of the potatoes and hollow out the flesh and leave a thin shell.
3. Mash the potato flesh and mix in the tuna with its oil, the butter, soured cream and seasoning.
4. Put the tuna mixture back into the potato shells and using a knife, mark the surface. Then place the bacon on top on the potatoes.
5. Put the potatoes in a shallow microwave oven safe dish and put in the oven at 220°C heat for 20-25 minutes. Best serve with freshly cooked green beans.
