Chicken with Cocoa Tomato Sauce

Chicken with Cocoa Tomato Sauce

4 chicken breast halves (skinless and boneless)
3 tbsp olive oil
¾ tsp pepper
1 tsp salt
1cup onion (chopped)
1 tsp minced garlic
1 tbsp cocoa powder (unsweetened)
1 tsp sugar
½ cup broth
1 pint tomatoes (diced)
1 pint tomato sauce
1 tsp basil (dried)
1 tsp oregano (dried)
Yellow rice (cooked and kept warm)


1. Spice both sides of the chicken breasts with ½ tsp of salt and ¼ tsp of pepper.
2. Heat 2 tbsp of olive oil in a flat-bottomed pan over medium heat and add the chicken, cook about 10 minutes on each side or until browned. Remove chicken and set it aside.
3. Add the remaining olive oil, onion and garlic to the pan stir frequently for two minutes. Pour in the tomato sauce and combined well the tomatoes, broth, cocoa powder, oregano, basil, sugar, ½ tsp salt and remaining pepper. Put back in chicken, cover and let simmer for 15 minutes.
4. Turn the chicken over, cover and continue cooking for another 15 minutes.
5. Place the chicken in a platter. Best serve with rice.
