How to Cook Porcupine Meatballs

This recipe was named porcupine though it’s not made of porcupine meat. It’s just because that rice pokes out of the meatballs and look like spines.


1 ½ lbs ground beef
2/3 cup long grain rice (uncooked)
1 ½ cups beef broth
½ cup onion (finely chopped)
2 garlic cloves (chopped)
¼ tsp cayenne pepper
1 tsp dried thyme
1 ½ tsp salt
1/8 tsp black pepper
1 can (15oz) tomato sauce
2 tsp worcestershire sauce
1 tbsp brown sugar


1. In a bowl, mix well the ground beef, uncooked rice, ½ cup beef, broth, onion, garlic, thyme, cayenne pepper, salt, and pepper.

2. Form the mixture into 1 ½ inch meatballs. Don’t make the meatballs too big, it would make the rice in center crunchy and half cook. Then place the meatballs in a shallow baking dish.

3. In a bowl, mix together 1 cup of beef broth, tomato sauce, worcestershire sauce and brown sugar. Then pour the sauce over the meatballs and cover the baking dish with foil.
4. Bake in 350 degrees oven for an hour. Remove the foil cover and bake again for additional 15-20 minutes. Best to serve with bread.
