Nutritious Baked Smokin’ Macaroni and Cheese
Ingredients
1 lbs or 2.2 kg of uncooked cellentani (corkscrew) pasta
1 can (12oz) evaporated milk
1 cup (4oz) smoked Gouda cheese (shredded)
½ cup (2oz) reduced-fat sharp Cheddar cheese (shredded)
1 (8oz) package chopped smoked ham
3 ounces fat-free cream cheese (softened)
2 tbsp butter
1 tbsp butter (melted)
3 cups fat-free milk
¼ cup all-purpose cream
½ tsp salt
¼ tsp ground red pepper (divided)
1 ¼ cups cornflakes cereal (crushed)
Vegetable cooking spray

Procedure
1. Preheat oven to 350° and prepare the cellentani pasta base on the package directions
2. In the meantime, melt 2 tbsp butter in a Dutch oven over a medium heat. Gradually whisk in flour, whisking it constantly for a minute. Then gradually add in milk and evaporated milk until smooth. Constantly whisking for 8 to 10 minutes or until slightly thickened.
3. Whisk Gouda cheese and 1/8 tsp ground red pepper until smooth. Remove from heat and stir in ham and pasta.
4. Pour pasta mixture into a 13 x 9 inch baking dish coated with cooking spray. Mix and stir crushed cereal, 1 tsp melted butter and remaining 1/8 tsp ground red pepper, sprinkle over the pastas mixture.
5. Bake at 350° for 30 minutes or until it’s golden and bubbly. Set for 5 minutes before serving.
