Greatest Carrot Cake of All Time

This is a deliciously moist carrot cake recipe that can make many servings of cake. You will be making this cake over and over again. You do not have to go to a hotels/restaurants for your favorite cake, unless you really want to! Preparation time is only an hour and 30 minutes and cooking time is only an hour. Therefore, you will have this masterpiece in only a couple of hours and 30 minutes!

Things to Prepare:

6 cups of grated carrots

1 cup of brown sugar

1 cup of raisins

4 eggs

1 ½ cups of white sugar

1 cup of vegetable oil

2 teaspoons of vanilla extract

1 cup of drained crushed pineapple

3 cups of all-purpose flour

1 ½ teaspoons of baking soda

1 teaspoon salt

4 teaspoons of ground cinnamon

1 cup of chopped walnuts


1.       Mix the grated carrots and brown sugar in a medium bowl. Set this aside for an hour before mixing in the raisins.

2.       Preheat the oven to 350 degF (175 degF) then grease and flour two cake pans 10 inch in size.

3.       Beat the eggs in a large bowl until light then gradually beat in the white sugar, oil, and vanilla then stir in the pineapple. Mix the flour, baking soda, salt and cinnamon then stir this mixture into the wet mixture until they are well-mixed. Combine this with the carrot mixture and walnuts then pour evenly into the cake pans.

4.       Place the pans in the oven and bake for about 45-50 minutes or until a toothpick inserted in the center of the cake comes out clean. Remove the pan from the oven then cool for about 10 minutes before removing the cake from the pan. Frost the cake with cream cheese frosting after the cake is completely cooled.
