“Mocha-licious” Muffins

“Mocha-licious” Muffins Mocha

Mocha is a flavor that combines coffee and chocolate so that we can enjoy both. To have the coffee flavor, you can add strongly brewed coffee or espresso to the butter and you can add cocoa to combine the chocolate flavor. You can also add in cappuccino chips, dark, white, or milk flavored chocolate chips in the butter.

Ingredients: 2 large eggs ½ cup (120 mL) buttermilk ½ cup (120 mL) unflavored oil (could be safflower, canola, or corn) ¼ cup (60mL) strong black coffee or espresso (should be at room temperature) 1 teaspoon pure vanilla extract 1 cup (130 g) all-purpose flour ¾ cup (95 g)

Whole wheat flour ¼ cup (25 g) sifted cocoa powder ½ teaspoon baking powder 1 teaspoon baking soda ¼ teaspoon ground cinnamon ½ teaspoon salt 1 cup (100 grams) coarsely chopped pecans or walnuts 1 cup (170 g) cappuccino, semisweet milk, or white chocolate.


1. Preheat the oven to 375 degF (190degC) then position your rack in the center of the oven then place paper liners into 12 2 ¾ x 1 ½ inch muffin cups or grease the muffin cups with non-stick cooking spray.

2. Mix together the eggs, buttermilk, oil, coffee, and vanilla extract in a large mixing bowl.

3. Combine all the dry ingredients (flours, cocoa powder, brown sugar, baking powder, baking soda, ground cinnamon, salt, and chopped nuts) in another mixing bowl. Using a rubber spatula, fold in the wet ingredients mixture into the dry ones and mix until the ingredients are well-combined. Make sure not to over mix the batter for this will result to tough muffins.

4. Fill the muffin cups evenly with batter using an ice cream scoop or two spoons then place in the oven to bake until a toothpick inserted in the center of a muffin comes out clean (that would be about 18-23 minutes of baking). Then transfer the tray to a wire rack and let cool for 5 minutes before getting the muffins out of the pan.

This recipe makes about 12 regular sized muffins.
